what are the considerations in writing poems that are meant to be appreciated by a non-poetic audience? For example, a poem to be read at weddings?

write in such a way that what you speak rings "true". a non-poetic audience does not want to be pander to. try harder. speak honestly.

I'm not sure there is a difference between writing for poets or non-poets to apprciate. Well-written poetry may be enjoyed by either. Why strive for mediocre?

the difference is in the comprehension if complexity. when people don't have a poem in front of their eyes, is is hard to recognize the layers. poets or non-poets, take them to a wedding, give them few drinks, read them a poem - you'll be surprised how much they'll enjoy a simple heart-felt poem without double/tripple meanings in every line. the only layered thing at a wedding should be a cake, imo.
